This factor is based completely on your preferences.  Really,  there's no right or wrong.  Both male and female gerbils make great pets.
Some things to keep in mind:

• Females are often more curious and investigative than males
• Males are sometimes more laid back
• Females may be more energetic
• Males are generally less territorial than females

My personal preference is females,  but that is mostly because I've just had more females than males and am biased.  Many people prefer males,  claiming they are tamer due to their supposed easy-going nature.  You may also hear that males are easier to introduce-  I have never experienced this,  but its certainly possible.
In the end,  you'll simply have to base your decision on your opinions and whats available.  Many petstores only sell one or the other.
